2019 Cabernet Franc
The 2019 Cabernet Franc was hand picked on 10/14 at 19 Brix with a pH of 3.3. Half of the fruit went towards pressing for dry rosé, the rest was allocated for the 2019 varietal. The fruit was de-stemmed, crushed and inoculated with Alchemy IV and the fermentation lasted 20 days and towards the tail-end was co-inoculated with malolactic bacteria. This wine has been 100% tank fermented and aged with no oak.
A bright and fruity nose with notes raspberry and blackberry and subtle hints of black pepper. The palate is fresh with acidity which lingers throughout the mouthfeel. Flavors of raspberry and wild blueberry with a buttery lasting finish.
